Cook's tip
No chipotle? Mix equal parts smoked paprika and chilli powder. Flour tortillas work too; toast them a little less. A spoonful of sour cream or a dash of hot sauce is a good finish.
Cooking it at camp
At a campsite, cook the sausage, bacon, mushrooms and beans one after another in a single big pan, and toast the tortillas on the grill grate or in a dry pan. Make the salsa at home and bring it in a tub; keep the meat and eggs in the cooler.
