Cook's tip

Split the khao khua between the sauce and the topping to get both its nutty depth and its crunch. With time to spare, marinate the chicken for up to 2 hours. Flour tortillas or naan work well instead of pitta.

Cooking it at camp

Marinate the chicken at home, bring it in the cooler and cook it on a griddle over coals or a camping stove. Make the yogurt sauce ahead in a sealed tub and keep it cold; warm the pittas at the edge of the grill.
