Thai Lemongrass Gambas
Garlic prawns Thai-style: olive oil infused with lemongrass, ginger and bird's eye chili, finished with fish sauce, lime and Thai basil.
Method
Peel the tough outer layer off the lemongrass, bash the pale bottom 10 cm with the back of a knife and slice it into 2 mm rings. Cut the ginger into fine matchsticks and halve the chilies. Squeeze the lime and stir the juice with the fish sauce and sugar to make the sauce. Pat the prawns dry.

Put the olive oil, lemongrass and ginger in a 18 cm skillet and warm over low heat for , until a bright, lemony aroma rises.

low heatAdd the garlic and chilies and cook over low heat for more, until the garlic is pale gold.

low heatAdd the prawns and cook over medium heat for , turning once, until they turn pink and curl into a C.
medium heatTurn off the heat, pour in the sauce and add the Thai basil, stirring so the leaves wilt in the leftover heat. Top with coriander and serve with the baguette.

Cook's tip
Always add the fish sauce off the heat; over a flame it turns harsh and can catch. No Thai basil? Use regular basil. No lemongrass? Use 1/2 tsp finely grated lime zest.
Cooking it at camp
Prep the lemongrass, ginger and chilies at home in a zip bag and mix the sauce in a small jar; at camp it takes 10 minutes on one burner. Toss rice noodles or rice in the leftover oil afterwards.
