Cook's tip

The genfo must be well chilled and firm to cut cleanly and hold its shape in the oven; make it the day before and you only need to bake. Dip the knife in water between cuts so it doesn't stick.

Cooking it at camp

Cook, set and cut the genfo at home and carry it in the cooler. At camp, skip the oven and fry the squares in a cast-iron pan with plenty of oil over medium heat until golden on every side.
