Filled with prunes simmered with spices and rum, set on warm vanilla custard and finished with nutty brown butter and poppy seed sugar.
Method
Filling: roughly chop the prunes and simmer them in a small pan with the water, cinnamon, cloves and rum on medium-low heat for , stirring often. When almost all the liquid has gone and the prunes are falling apart, remove the cloves and mash with a fork into a thick purée that holds a spoon upright. Spread on a plate and cool completely; cold filling is far easier to wrap.

Cook's tip
Runny filling escapes through the seam, so cook it down well and use it cold. Make it up to 3 days ahead and keep it in the fridge. Brown butter turns burnt within seconds, so watch it closely once it starts to colour.
Cooking it at camp
Make the filling and vanilla sauce at home and carry them in a cooler below 5 °C; knead the dough at home too. At camp, steam the dumplings in a steamer or over a cloth-covered pot, brown the butter in a small pan and rewarm the sauce gently on low, stirring.
