Cook's tip

The starch in the pasta water binds the coconut sauce and oil into one silky sauce, so do not throw it away; add it little by little to adjust. Curry paste and fish sauce are salty, so you can go a little lighter on salt in the pasta water.

Cooking it at camp

With one burner, cook the pasta first, toss it with a little olive oil, then make the sauce in the same pot. Keep the shrimp in the cooler and bring small cartons of coconut milk so nothing goes to waste.
