Cook's tip

Scotch bonnet is very hot: start with less, taste the broth and add more. Wear gloves when chopping it and keep your hands away from your eyes. If the broth is too thick, loosen it with stock or hot water. Cook the noodles just before serving so they do not go soft.

Cooking it at camp

Two burners make it easy to run the broth and noodles at once. With one, cook the eggs and pork first, make the broth and keep it warm, and boil the noodles last. Dried ramen works if you cannot keep fresh noodles cold.
