Don't stir; swirl the pan gently, and when it turns light amber, add the peanuts and salt, stir quickly and spread thinly on the paper. Melted sugar is hotter than 150 °C and burns badly, so never taste it with your finger.

Cook's tip

Cilantro is a nod to Taiwan's peanut ice cream roll and adds a fresh lift, but mint works if you're not a fan. Brittle keeps for a week in an airtight jar. Take the ice cream out of the freezer 5 minutes ahead for easier scooping.

Cooking it at camp

Make the brittle crumbs at home and bring them in a sealed box; keep the ice cream in a cooler packed with dry ice or plenty of ice. Warm the buns on a steaming rack in a pot, then fry them in butter in a pan on the burner. If ice cream is impractical, fill them with condensed milk and banana instead.
