Cook's tip

Grating cheese from a block makes a much smoother sauce than pre-grated or sliced cheese, which can split. Chicken works instead of shrimp, but cook it right through in step 2. No oven? Stop after step 5 and eat it straight from the pan; it is still delicious.

Cooking it at camp

At camp, mix everything in a Dutch oven and bake for 15 to 20 minutes with coals underneath and on the lid for an oven effect. Making the cheese sauce at home and cooling it simplifies things at the site. Keep the shrimp cold in the cooler.
