Cook's tip

The chips and whipped feta can be made a day ahead: keep the chips in an airtight tin and the feta in the fridge. Chicken thigh strips work too (cook to 74 °C). A pinch of chilli flakes over the top adds a nice kick.

Cooking it at camp

Bring the pita chips (or tortilla chips) and the whipped feta from home, the feta in the cooler. At the campsite only the pork needs cooking: sear it in a cast-iron pan over the burner, then build the nachos right in the pan and share.
