Cook's tip

Corn tortillas crack when cold; if they tear, warm them a little longer or use two stacked together, taco-stand style. No chipotle? Use smoked paprika with a little cayenne. Halibut or cod work too.

Cooking it at camp

Perfect for the campsite: bring the salsa ready-made in the cooler, sear the salmon in a cast-iron pan on the burner or on a griddle plate over charcoal, and warm the tortillas straight on the grill grate for a few seconds per side. Keep the raw salmon below 5°C until cooking.
