Oven-Stacked Döner İskender
Bursa-style upgrade: lamb and beef pressed into a stack, roasted, shaved thin like döner and crisped, with fresh tomato sauce and ghee-butter.
Method
Freeze the lamb and beef for 30–40 minutes until firm, then slice across the grain 2 mm thick. Grate the onion, squeeze out the juice and mix with the milk, yogurt, olive oil, salt, pepper, cumin, paprika and thyme. Toss the meat in it and marinate in the fridge for at least (up to overnight).

Preheat the oven to 200 °C. In a loaf tin or small baking dish sized so the stack will be 6–8 cm tall, layer the lamb and beef slices alternately, pressing each layer down firmly with your palm so there are no gaps. Roast (oven) for , until 75 °C in the centre and browned on top.

Cook's tip
Press each layer hard so the roast doesn't crumble when you shave it. Leftover stack sliced cold from the fridge shaves even thinner.
Cooking it at camp
Roast the stack at home, cool it, wrap it and keep it in a cooler at 4 °C or below. At the campsite, just shave it thin and crisp it in a cast-iron pan.
