Jjimdak Cheese Skillet Fried Rice
Jjimdak-glazed chicken and chewy glass noodles stir-fried with rice, pressed into a crisp golden crust and blanketed with melted mozzarella.
Method
Soak the noodles in hot water for , then cut into 3 cm lengths. Cut the chicken into 1.5 cm pieces, finely dice the onion and carrot (about 0.5 cm) and slice the spring onion. In a small bowl, mix the soy sauce, brown sugar, syrup and cooking wine to make the jjimdak sauce.

medium-high heatSpread the rice flat across the pan about 1.5 cm thick and drizzle the sesame oil around the edge. Scatter over the seaweed and spring onion, top with the mozzarella, cover and leave on medium-low heat for . When the cheese has melted and you hear a gentle crackle from the bottom, the crust has formed.
Add in this stepToasted sesame oil 1½ tspCrumbled roasted seaweed 2 tbspSpring onion or Korean leek 30 gShredded mozzarella 80 g
medium-low heatBring the pan to the table and scoop it up with spoons, scraping up the crispy crust with the cheese.
Cook's tip
Freshly cooked rice turns mushy, so use day-old or reheated frozen rice. Keep the final step on medium-low so the crust browns without burning, and switch off as soon as it smells toasty. Leftover jjimdak works brilliantly: chop it, add it and skip steps 2 and 3.
Cooking it at camp
Made for a camp griddle or cast-iron pan. Pack the sauce and chopped ingredients in tubs at home; the thicker the pan, the more even the crust. No lid? Cover with foil to melt the cheese.
