Cook's tip

The slightly caught layer on the bottom is prized locally as the best part of 'party jollof'. If the rice is undercooked, sprinkle on 2 to 3 tbsp of hot stock and cook 5 minutes more.

Cooking it at camp

Blend and cook down the sauce at home and carry it in an airtight container to halve the cooking time on site. Use a burner that holds a low flame well. In a cast-iron Dutch oven, cook for 25 minutes with 8 coals on top and 6 underneath.
