Injeolmi Kaiserschmarrn with Honey Butter
Austrian Kaiserschmarrn meets Korean injeolmi: a fluffy roasted-soybean batter, torn and tossed in honey butter, then snowed with nutty soybean powder and toasted almonds.
Method
Separate the eggs, putting the whites in a clean bowl. Whisk the yolks with the milk, flour and the batter soybean powder until smooth and lump-free; soybean powder clumps easily, so mix it with the flour first.

Add the salt to the whites and whisk until foamy, then add the sugar a little at a time and whisk for more, until glossy with firm peaks. Fold into the batter in three additions with a spatula.

Toast the almonds in a dry 24 cm frying pan on medium-low heat for , shaking often, until golden, then tip onto a plate. They burn quickly, so keep watching.

medium-low heatAdd the remaining butter and the honey and toss quickly on medium heat for , until every piece is glossy with honey butter. Honey burns fast, so take the pan off before it turns dark brown. Break a piece open to check it is cooked through.

Cook's tip
Dust the soybean powder while the honey butter is still warm so it clings. If you love rice cakes, warm a few small cubes of soft mochi in the pan in the honey-butter step. A scoop of vanilla ice cream turns it into a café dessert.
Cooking it at camp
Mix the soybean powder and flour at home in a zip bag so you only need to add eggs and milk at camp. Cook in a cast-iron pan on a burner over a slightly lower flame, and bring the honey in a squeeze bottle.
