About servingsFrying oil is extremely hot. Pat the meat dry, keep water away from the oil, and if it catches fire, never use water: cover with a lid and turn off the heat.

Method

  1. Make the pickled radish slaw: cut the radish into matchstick-thin strips, toss with the vinegar, sugar and salt and leave for . Once it has softened, squeeze it firmly in your hands so it won't make the bread soggy.

  2. Snip the sinew between the fat and the meat every 2 cm and tap the pork with the back of a knife to even the thickness. Pat dry, season with salt and pepper, then coat in flour, beaten egg and panko in that order, pressing the crumbs on firmly with your palm.

  3. Pour oil 3 cm deep into a 22 cm pot and heat on medium-high heat for about to 170 °C. A crumb dropped in should sink halfway and pop straight back up.

    low heat
  6. Spread mayonnaise on one side of each slice of bread, pile on the radish slaw, add the glazed katsu and close with the second slice. Wrap tightly in cling film and press for , then trim the crusts and cut in half.

Add in this stepSoft white sandwich bread, 1.5–2 cm slices 4Mayonnaise 2 tbsp

Cook's tip

The sauce turns salty and gluey if reduced too far, so take it off as soon as it bubbles. For less heat, use less gochujang and more ketchup. The radish slaw can be made a day ahead and kept in the fridge.

Cooking it at camp

Fry and cool the katsu at home and pack the slaw and sauce in separate tubs in a cooler. At the campsite, warm the sauce in a pan, roll the katsu through it and sandwich right away. Avoid heating pots of oil outdoors.
