Cook's tip

A metal muffin tin gives a much crisper result than silicone. For a party, bake the cups ahead, reheat at 200 °C for 5 minutes just before serving and then add the toppings. No pomegranate seeds? Use finely diced cherry tomatoes.

Cooking it at camp

Bake the cups at home and pack them and the garlic yogurt separately in a cooler. At the campsite, warm the cups in a lidded cast-iron pan over low heat for 8–10 minutes to re-crisp the bases, then add the toppings.
