Cook's tip

A tadka can burn in seconds, so have every spice measured and next to the stove before you start. If the cumin turns black, it's bitter. No curry leaves? Leave them out and add chopped cilantro stems instead.

Cooking it at camp

Cook the stew at home and reheat it at camp, then make only the tadka fresh in a small pan and pour it straight on for the best aroma. Measure the spices out beside the burner first.
