Cook's tip

Half-freeze the beef and it slices paper-thin. The broth must be at a full boil when you pour it, or the beef will not cook. If you dislike coriander, shredded perilla leaves work beautifully.

Cooking it at camp

Make the charred-aromatic broth at home and pack the beef frozen in the cooler; it thaws on the way and slices easily. With one burner, blanch the noodles first, then boil the broth in the same pot.
