Kontomire Saag Paneer (Ghanaian × Indian)
Ghana's green stew meets India's saag paneer: blended kontomire or spinach cooked with palm oil, ghee and warm spices, finished with golden seared paneer.
Method
Bring water to the boil in a 22 cm pot and blanch the spinach on high heat for , then plunge it straight into cold water to keep it bright green. If you use kontomire, it must be boiled for at least 15 minutes until completely soft. Squeeze it dry and blend coarsely with 2 tablespoons of water.

Cook's tip
Firm tofu or halloumi, seared the same way, can replace the paneer. For more palm-oil character, drizzle over 1 extra teaspoon at the end. If you swap the cream for Greek yogurt, stir it in off the heat so it doesn't split.
Cooking it at camp
Blanch and blend the spinach at home and bring it in a sealed container; at the campsite it then takes 20 minutes in one pan. Keep the paneer and cream in the cooler, and warm naan or tortillas over the burner to serve.
