Cook's tip

Pat the pickle slices dry so the bread doesn't go soggy. Leftover schabowy from dinner works perfectly here: just slice it cold. A drizzle of garlic mayonnaise is a popular Polish extra.

Cooking it at camp

Pre-cook the cutlets and mushrooms at home. At the campsite, top the baguettes, wrap each in foil and heat on a grill over medium coals, or in a covered skillet over low heat, for about 10 minutes until the cheese melts; open the foil for the last minute to crisp up.
