Cook's tip

If your bread is larger than the pan, trim the crusts to fit. Put the bread on straight after pouring in the egg or it won't stick. No pomegranate molasses? Mix honey with a few drops of lemon juice.

Cooking it at camp

Pack bread, the herb-egg mix in a sealed jar in the cooler, and feta: a perfect camp breakfast. Camp burners run hot, so stay between low and medium-low and use a heavy pan so the bread doesn't scorch.
