Kimchi Bulgogi Kumpir (Turkish × Korean)
A butter-and-mozzarella kumpir topped with sweet-savoury beef bulgogi, fried kimchi and gochujang mayo: Istanbul's baked potato meets Seoul.

Hold each baked potato with an oven glove or tea towel and cut a long slit along the top without cutting through the bottom. Push the ends together to open it, add the butter and salt and mash the flesh with a fork, then add the mozzarella and stir hard until stretchy.
Add in this stepButter, softened 30 gSalt 1 pinchMozzarella, grated 100 g
Pile on the kimchi bulgogi, scatter over the sweetcorn, zigzag with gochujang mayo, sprinkle with spring onions and sesame seeds and serve hot.
Add in this stepSweetcorn (tinned, drained) 60 gSpring onions 1Toasted sesame seeds 1 tsp
Cook's tip
Sour, well-fermented kimchi balances the sweetness of the bulgogi best; if yours is very sour, add a pinch of sugar as you fry it. For less heat, halve the gochujang and add a little honey to the mayo.
Cooking it at camp
Wrap the potatoes in two layers of foil and cook them in the edge of the campfire embers for 40 to 60 minutes, turning now and then. Marinate the beef at home, carry it in a zip bag in the cooler, and fry it with the kimchi in a pan on the burner. Cook the beef until no pink remains.
