Kung Pao Chicken
Sichuan's best-loved stir-fry: juicy chicken thigh and crunchy peanuts tossed in chili and Sichuan pepper oil with a glossy sweet-sour sauce.
Method
Cut the chicken into 1.5 cm cubes, add the marinade soy sauce, Shaoxing wine and cornstarch, mix well with your hand and leave for 10 minutes. Meanwhile, snip the chilies into 2 cm pieces and shake out the seeds, cut the scallion whites into 1 cm lengths and thinly slice the garlic and ginger. In a small bowl, stir the vinegar, sugar, light and dark soy sauce, sauce cornstarch and water until the sugar dissolves.

Cook's tip
Add the peanuts only after the heat is off so they stay crunchy. If you use ready-roasted unsalted peanuts, skip step 2 and just heat the oil. The chilies and peppercorns are there for flavour; you can leave them on the side of the plate.
Cooking it at camp
One burner and a deep frying pan are enough. Cut and marinate the chicken at home, carry it in a zip bag in the cooler and pre-mix the sauce in a jar, and it is done in 10 minutes at camp. If wind weakens the flame, give the chicken 1 to 2 extra minutes.
