Cook's tip

The bread starts to go soggy about 10 minutes after dressing, so toss just before eating. To prep ahead, keep the components separate and combine at the last minute. Grilled chicken or feta also work in place of the tuna.

Cooking it at camp

Boil the eggs and make the dressing at home and keep them in the cooler; toasting the bread on the campsite grill makes it even better. The chickpeas need just one pan on a burner.
