Crispy Lasagna Cups
All the flavours of lasagna baked in a muffin tin: crunchy golden wrapper tips, meaty tomato sauce, creamy ricotta and bubbling mozzarella in every bite.
Method
Preheat the oven to 190°C for . Brush 6 cups of a muffin tin with olive oil.

ovenHeat the oil in a 20 cm frying pan over medium-high heat, add the garlic for 30 seconds, then the beef. Cook for , breaking it up, until browned. Add the passata, oregano, salt and some pepper, lower to medium-low heat and simmer for , until thick enough that a spoon drawn through leaves a clear trail. A thick sauce keeps the cups crisp.

medium-high heat→medium-low heatFinely chop half the basil and mix it with the ricotta, the Parmesan for the filling and the salt.

Press a wrapper into each cup so the corners stand up. Add 1 teaspoon of ricotta, 1 tablespoon of meat sauce and a pinch of mozzarella. Lay a second wrapper on top, turned 45 degrees so the corners form a star, press it down gently and repeat the ricotta, sauce and mozzarella. Finish with the rest of the mozzarella and the Parmesan for the top.

Bake in the oven for , until the wrapper tips are deep golden and crisp and the cheese is bubbling.
ovenLet the cups firm up in the tin for , then lift them out with a butter knife. Top each with one of the remaining basil leaves and serve warm.

Cook's tip
Watch the wrapper tips in the last few minutes: they go from golden to burnt quickly. If you can't find wonton wrappers, cut fresh lasagna sheets into 9 cm squares. The cups can be assembled up to 2 hours ahead and chilled; add 2 minutes to the bake.
Cooking it at camp
Make the sauce at home. At camp, assemble the cups in a small greased cast-iron pan instead of a muffin tin, cover with the lid and cook on a low burner for 10 to 12 minutes until the cheese melts; the bottoms crisp up but the tips stay soft.
