Bubbling Lasagna Dip with Garlic Baguette
Rich meat and tomato sauce topped with basil ricotta and plenty of mozzarella, baked until bubbling and scooped up with crisp garlic baguette: a party favourite.
Method
Preheat the oven to 200 °C for . Meanwhile, finely chop the onion and garlic.
Heat the olive oil in a 18 cm ovenproof pan, add the minced beef and fry over medium-high heat for , breaking it up, until browned.

medium-high heatAdd the onion, garlic and tomato paste and cook over medium heat for , until the onion is translucent and the paste darkens.

medium heatAdd the tomatoes, herbs and salt and simmer over medium-low heat for , stirring, until thick: when you drag a spatula across the bottom, the line should not close up straight away. A thick sauce keeps the dip from running. Turn off the heat and smooth the top.

medium-low heatMix the ricotta with half the Parmesan, the finely sliced basil and some pepper. Drop spoonfuls over the sauce and swirl lightly for a marbled look. Scatter the mozzarella and remaining Parmesan evenly on top. Slice the baguette 1 cm thick, mix the butter with the crushed garlic and chopped parsley, spread on one side and lay on a baking tray.

Bake the dip on the middle shelf at oven for . Put the baguette on the shelf below for the last . It is ready when the cheese is bubbling with brown spots and the bread is golden at the edges.
ovenThe pan is very hot, so use oven gloves. Let it sit for about 3 minutes, then scoop up the dip with the garlic baguette.
Cook's tip
A thin sauce turns watery once the ricotta goes in, so reduce it well. Leftover lasagna soup, simmered down, also makes a great base. Toasted pitta chips or crackers work instead of baguette.
Cooking it at camp
Use a lidded cast-iron pan instead of the oven. Make the sauce, add the ricotta and cheese, cover and leave over low heat for 5 to 7 minutes until the cheese melts. With charcoal, put a few coals on the lid to brown the top. Toast the baguette on the grill grate.
