Cut the pork belly into 5 cm wide strips and put them in a 20 cm pot with the water and salt. Bring to the boil on high heat, skim, then lower to medium-low heat and simmer for , until a chopstick slides in easily.

Pour the oil into a deep, heavy 22 cm pot, no more than one-third full, and heat on medium-high heat for to 180 °C. Stay by the hot oil and keep a lid nearby.

Add the oyster sauce, soy sauce, fish sauce, palm sugar and water; when it bubbles, add the sliced pork and toss quickly for to coat. Turn off the heat, add the holy basil and stir just until it wilts. Tossing too long makes the skin soggy.

Cook's tip
Keep the sauce scant so it just glazes the pork and the skin stays crunchy. Adjust the heat with the number of chillies. With leftover lechon kawali, skip steps 1–4 and re-crisp it in a 200 °C air fryer for 8 minutes.
Cooking it at camp
Boil and fry the pork at home, or crisp it in a cast-iron pan, and carry it chilled. At camp, re-crisp the pork in a hot pan on the burner and set it aside, then use the same pan for the eggs and the stir-fry. Microwaveable or pre-cooked rice packs keep things simple.
