Method

  1. Slice the sausage thinly on the diagonal, 2–3 mm thick. Spread it in a dry 24 cm pan and cook over medium-high heat for , turning, until crisp like chips. Lift the sausage out and leave the fat in the pan.

    medium-high heat
  2. Add the olive oil to the fat, then the thinly sliced red onion, the peppers cut into thin strips and half the salt. Cook over medium heat for , until the vegetables are very soft, sweet and lightly caramelised at the edges.

  3. Take the pan off the heat for a moment and stir in the smoked paprika (it burns easily), then add the chopped tomatoes and the rest of the salt. Return to the heat and cook over medium-low heat for , until thick and jammy with almost no liquid left; a watery topping makes soggy toast.

    medium-high heat
  6. Spread the warm toast thickly with whipped feta, pile on the lecsó and top with the crispy sausage chips. Drizzle with a thin thread of honey, scatter with parsley and serve straight away.

Cook's tip

Reducing the lecsó well is the key: it is ready when a spoon drawn across the pan leaves a path that doesn't flood back. Make the whipped feta and lecsó the day before and chill them; in the morning just warm the lecsó and it takes 5 minutes.

Cooking it at camp

Make the lecsó and whipped feta at home and carry them in boxes, keeping the feta cold in the cooler. At the campsite, toast the bread on the grill, crisp the sausage in a pan and simply assemble.
