  6. Rest for 5 minutes, then pile on the remaining herbs and the pomegranate seeds and serve in the pots. Lovely with cornbread (mchadi) or toasted bread and pickles.

Add in this stepFresh coriander (cilantro) 5 gDill 2 gBasil (purple basil if possible) 2 gPomegranate seeds 30 g

Cook's tip

Walnuts burn quickly, so stay by the pan while toasting. No pomegranate molasses? Use 1 tsp lemon juice and a little sugar. Clay pots can crack if put straight into a hot oven: start them in a cold oven or use heatproof dishes.

Cooking it at camp

Cook the beans at home and make the walnut paste and caramelised onion ahead too. At camp, combine everything in a cast-iron Dutch oven, cover and set it over coals for 20 minutes for an oven-baked feel.
