Cut the pastry 2 cm wider than each dish, lay it on top and press the edges firmly onto the rim. Brush with beaten egg, cut a small slit in the centre to let steam escape and sprinkle with the pepper flakes.
Add in this stepReady-rolled puff pastry, thawed 120 gEgg (for glazing) ½Red pepper flakes ¼ tsp
Bake in the preheated oven at 200 °C for , until the pastry is well risen and deep golden. The filling is very hot, so wait 5 minutes before serving.
Cook's tip
Bake the dishes on a tray to catch any sauce that bubbles over. Make the filling a day ahead and fill the dishes while it is cold: the pastry rises even higher.
Cooking it at camp
Bring the filling from home. At camp, put it in a lidded Dutch oven, cover with the pastry and bake with a few coals underneath and plenty on the lid for 20 to 25 minutes. Without a Dutch oven, just heat the filling and serve it with toasted bread.
