Cook's tip
Freshly cooked rice turns mushy when fried, so use cold or day-old rice. Cooled wrapper shards keep crisp for two days in an airtight box and make a great salad topping too. Minced chicken or crumbled tofu works in place of the pork.
Cooking it at camp
No oven at camp, so bake the wrapper shards at home and carry them in an airtight box. The garlic rice, pork and eggs can all be cooked one after another in one wide pan: a perfect camp breakfast.
