Method

  1. Preheat the oven to 180 °C for . Use a little of the butter to grease a 15×10 cm ovenproof dish (a mug or ramekin for one serving) evenly with your fingers or a brush.

Add in this stepButter (including some for greasing) 3.6 g

    oven
  2. Beat the egg in a bowl, weigh out the amount in the list, add the sugar and whisk with an electric mixer for , until pale and thick and falling from the beaters in a ribbon. Mix in the apricot jam.

Add in this stepEgg, beaten and weighed (1 egg ≈ 50 g) 25 gCaster sugar 60 gApricot jam 1 tbsp

  3. Melt the rest of the butter in a small pan or in the microwave over low heat for about , then stir in the milk and vinegar. The vinegar reacts with the bicarbonate of soda to make the pudding light; it's normal if the milk curdles slightly.

Add in this stepButter (including some for greasing) 8.4 gMilk 50 mlVinegar ½ tsp

    low heat
  4. Sift the flour, bicarbonate of soda and salt over the egg mixture and fold in with a spatula in a few additions, alternating with the milk mixture, just until no dry flour shows. The batter should be runny, like pancake batter; overmixing makes it tough.

Add in this stepPlain flour 55 gBicarbonate of soda (baking soda) ½ tspSalt 1 pinch

  5. Pour the batter into the dish and bake on the middle shelf of the oven for , until the top is a deep, glossy caramel brown and a skewer pushed into the centre comes out without wet batter. A dark top is normal, not burnt.

    oven
  6. About 5 minutes before it's done, make the sauce: put the cream, butter, sugar and hot water in a saucepan over medium-low heat and stir for , until the butter has melted and the sugar dissolved. Take off the heat and add the vanilla. It doesn't need to boil.

Add in this stepDouble or whipping cream 100 mlButter (for the sauce) 35 gSugar (for the sauce) 35 gHot water 40 mlVanilla extract ½ tsp

    medium-low heat
  7. As soon as the pudding comes out, prick it all over with a skewer or fork. Slowly pour the hot sauce evenly over the top and leave it for to soak in. It will look like too much sauce at first, but it all gets absorbed. Serve warm with custard or vanilla ice cream.

Cook's tip

The sauce is the soul of malva pudding, so don't skimp on it. Swapping bicarbonate of soda for baking powder changes both the colour and the flavour. Leftovers keep in the fridge and come back to life with a short blast in the microwave.

Cooking it at camp

You can bake it in a lidded cast-iron pot (Dutch oven): pour the batter into the greased pot, cover, and bake with a few coals underneath and about twice as many on the lid for 30–40 minutes, then warm the sauce on a burner and pour it over. Or bake it at home and just heat and pour the sauce at camp.
