Cook's tip

Thighs stay far juicier than breast. For a deeper smoky flavour, cook the chicken on a charcoal grill. Leftover mandi rice spooned into the tortilla turns it into a burrito-style wrap.

Cooking it at camp

A perfect camp meal. Marinate the chicken at home and carry it in a zip bag in the cooler; cooked over a charcoal grill, it gets a real mandi-style smokiness. Warm the tortillas right on the grill too.
