Mapo Tofu
A Sichuan tofu dish simmered with chili bean paste and Sichuan pepper until spicy and tingling.
Method
Cut the tofu into 2 cm cubes and blanch for 2 minutes in boiling salted water (high heat), then drain.

high heatHeat oil in a pan and fry the pork over medium-high heat for until crisp. Turn down to low heat, add the chili bean paste, sweet bean sauce, chili flakes, garlic and ginger, and fry 1 minute until the oil turns red.

medium-high heat→low heatAdd the stock, soy sauce and sugar. When it boils, add the tofu and simmer over medium heat for , gently pushing it with a ladle rather than stirring.

medium heatMix the starch with the water and add it in three parts over medium heat to thicken. Sprinkle with green onion and Sichuan pepper.

Cook's tip
Blanching firms up the tofu so it breaks less and absorbs more flavour. If you have no Sichuan pepper, use freshly ground black pepper.
Cooking it at camp
Mix the chili bean paste and sweet bean sauce at home and bring them in a small tub. You can finish the dish at the campsite in 10 minutes.
