Cook's tip
A star nozzle makes them look like real cupcakes. If the mash is too stiff, beat in a little more milk; too loose, stir it over low heat before piping. Sweet potato mash makes a colourful version. Great for kids' parties and lunch boxes.
Cooking it at camp
Bake the meatloaf cups at home and carry them chilled; at camp, reheat them over low heat in a covered pan or Dutch oven. For quick mash, mix instant potato flakes with hot water and butter. Spooning it on works fine instead of piping.
