Method

  1. Peel the potato, cut it into 1.5 cm cubes and boil it in a 16 cm pot of water on high heat for , until a knife slides in easily; drain. Meanwhile cut the tofu into 2 cm cubes, thinly slice the shallots, chop the garlic, cut the tomato into wedges and the cabbage into bite-size pieces. Peel and devein the shrimp. Put the noodles in a colander, pour hot water over them and shake to loosen the strands, then drain well.

  2. In a small bowl, stir together the kecap manis, light soy sauce, ketchup, oyster sauce and water. Mixing the sauce now means nothing burns while you hunt for bottles at the stove.

  3. Heat a 28 cm wok or large frying pan on medium-high heat, add part of the oil and fry the tofu for , turning, until golden and crisp on all sides. Lift it out onto a plate.

  4. Add the rest of the oil and lower the heat to medium heat. Fry the garlic and shallots for about 30 seconds until fragrant, add the chili paste and stir until the oil turns red, then add the shrimp. Cook for in total, until the shrimp are pink and curled.

Add the noodles, cabbage, tomato, boiled potato and tofu, pour the sauce around the edge of the wok and toss for . Press some potato cubes with the spatula so they break and cling to the noodles; that is the mamak signature. The noodles are ready when every strand is glossy red-brown and lightly charred in spots.

  6. Add the bean sprouts and toss on high heat for , just until they wilt but still crunch. Taste and add a dash more soy sauce if needed. Serve hot with lime halves to squeeze over.

Cook's tip

Fresh alkaline yellow noodles are classic; with dried egg noodles, boil them 1 minute less than the packet says and rinse in cold water. Chicken thigh strips can replace the shrimp: add them before the chili paste and cook until no pink remains. In step 4, don't stir nonstop; let the noodles sit a few seconds between tosses so they char like at the stall.

Cooking it at camp

Boil the potato and mix the sauce at home and bring them in a cooler. On a single camp burner, use a wide pan and cook one or two servings at a time over the strongest flame; keep the shrimp on ice until you cook.
