Lentil Soup Shakshuka with Garlic Yogurt & Chili Butter
A Turkish-style brunch skillet: spiced red lentil soup cooked down thick, eggs poached on top, finished with garlic yoghurt and chilli butter.
Method
Rinse the lentils until the water runs clear. Cut the onion and pepper into 1 cm pieces and chop the garlic (keep a little aside for the yoghurt). Heat the olive oil in a 22 cm frying pan with a lid on medium heat and cook the onion, pepper and garlic for , until soft.

medium heatAdd the lentils, water and salt, bring to the boil on high heat, then lower to medium-low heat and simmer for , until the lentils break down into a thick porridge. Aim for much thicker than soup: a spoon dragged through should leave a trail for a moment. It sticks easily, so stir every 2–3 minutes, adding a splash of water if it gets too stiff.

Spoon dollops of garlic yoghurt over the shakshuka, drizzle with the red butter and scatter with chopped parsley. Warm the pita in a dry pan or toaster and serve straight from the pan.

Cook's tip
For fully set yolks, keep the lid on for another 3–4 minutes. Young children, pregnant women, older people and anyone with weak immunity should eat the yolks fully cooked. Make the lentil base the day before and in the morning just reheat it and add the eggs.
Cooking it at camp
One lidded cast-iron pan makes this a perfect camp brunch. Cook the lentil base over a burner or coals; wind stops the eggs setting, so use a windbreak and keep the lid on. Keep eggs and yoghurt in a cooler at 5 °C or below.
