Mince and Cheese Pie Toastie
A Kiwi café favourite: pie-style beef gravy and two cheeses pressed between buttery bread until golden, crisp and gloriously stretchy.
Method
Heat the oil in a 20 cm frying pan over medium-high heat and fry the onion and beef together for until the meat is browned. Sprinkle in the flour and fry 1 minute more.

medium heatButter one side of each slice thinly. Place half the slices butter side down and layer cheddar, the filling (leave a 1 cm border) and mozzarella, then top with the remaining slices, butter side up.

Heat a 26 cm frying pan over medium-low heat. Cook the toasties in 1 batch(es), pressing down with a small saucepan or plate, for until deep golden underneath. Flip, press again and cook for more. Low heat is the secret: on high the bread burns before the cheese melts.

Cook's tip
Bread about 1.5 cm thick works best. Leftover pie filling or bolognese sauce works too. In a sandwich press, layer the same way and cook for 4 to 5 minutes.
Cooking it at camp
Make the filling at home and carry it cold. At camp, cook in a pan on the burner or in a hinged campfire toastie iron. Over charcoal, keep to the cooler edge and turn often.
