Berbere Lentil Ragù Rigatoni
Misir wat's berbere and red lentils simmered into an Italian-style ragù and tossed with short pasta: rich and meaty-tasting without any meat.
Method
Finely chop the onion and carrot into 5 mm pieces and thinly slice the garlic. Rinse the lentils until the water runs clear.
Heat the olive oil in a deep frying pan (24 cm), add the onion and carrot and cook over medium heat for , until the onion is translucent and the edges are just turning golden.

medium heatAdd the garlic, berbere and tomato paste and stir over medium-low heat for , until the oil turns red and smells fragrant.

medium-low heatAdd the lentils, crushed tomatoes and water, half-cover and simmer over medium-low heat for . Stir now and then so nothing sticks. When the lentils have broken down and the sauce is thick like a bolognese, season with salt.

medium-low heatWhile the ragù simmers, bring the water (2.5 L) to a boil in a large pot over high heat (), then add the coarse salt. Add the pasta and cook over medium-high heat for , one minute less than the packet says. Scoop out a mug of pasta water before draining.

Cook's tip
Wide tubes like rigatoni trap the ragù best. If the sauce gets too thick, loosen it with pasta water a spoonful at a time. For less heat, swap half the berbere for smoked paprika.
Cooking it at camp
Cook the ragù at home and bring it in a sealed tub; at camp you only boil the pasta and toss it with the reheated sauce. On a single burner, cook and drain the pasta first, then warm the ragù in the same pot.
