Cook's tip

Freshly cooked rice is too moist and turns mushy; spread it out to cool, or use day-old rice. The molokhia gets nuttier as it cooks down but turns bitter if it catches, so keep stirring. Prawns or tofu work well instead of chicken.

Cooking it at camp

One wide cast-iron pan or skillet handles the rice and then the eggs. Pack the rice and thawed molokhia in zip bags in the cooler, and keep the raw chicken sealed and apart from other food.
