Cook's tip

Curry pastes vary a lot in heat and saltiness, so start with two thirds of the amount and add more to taste. Couscous drinks sauce quickly, so ladle the curry over just before eating. For prawns instead of chicken, add them for the last 3 minutes of step 4 and cook only until pink.

Cooking it at camp

Couscous needs nothing but boiling water, which makes it perfect for camping. Make the curry on one burner, keep it covered, then boil water in a camp kettle to soak the couscous. Cut the vegetables at home and carry them in a zip bag, with the chicken in the cooler.
