Cook's tip

The crumb cups stay crisp for a day in an airtight box, so you can bake them ahead. Once filled, eat them the same day, as the base softens over time. Strawberries or orange segments work well instead of raspberries.

Cooking it at camp

Pack the crumb cups and the mousse separately. Keep the mousse cold in its piping bag in the cooler and pipe it at the campsite just before eating, then add the fruit, so the cups stay crisp.
