Cook's tip

Opening the thighs to an even thickness means they cook through before the coating burns. Fry no more than 2 pieces at a time, or the oil cools and the coating turns greasy. For the full nasi lemak experience, serve with a little coconut rice on the side.

Cooking it at camp

Make the sambal, sambal mayo and anchovy-peanut crunch at home. At the campsite skip the frying: grill the marinated chicken for 10 to 12 minutes, turning, and finish with the sambal glaze. Toast the buns and fry the eggs in a cast-iron pan.
