Cook's tip

White miso softens the acidity of the tomatoes and adds savoury depth. Miso and cheese are both salty, so don't add extra salt to the sauce. It is even better made a day ahead and reheated.

Cooking it at camp

Roast the eggplant and make the sauce at home, layer everything in a disposable foil tray and pack it in a cooler. At the campsite, cover with foil and warm it on a grill over charcoal or in a Dutch oven for 15–20 minutes, until the cheese melts. With a Dutch oven, put a few coals on the lid to brown the top.
