Cook's tip

Use cold rice or the fried rice turns mushy. Stir the omelette fast over a gentle heat for a fluffy result. If scotch bonnet is too hot for you, use half in the sauce or swap in sweet paprika.

Cooking it at camp

The fried rice needs just one big pan, and a small non-stick pan handles the omelettes even at a campsite. Make the sauce at home so it only needs warming. Stove flames are hard to fine-tune, so lift the pan on and off the heat to keep the omelette soft.
