Cook's tip

Kneading and slapping the mixture well is what makes the cakes bouncy. Pulse a food processor in short bursts; running it too long warms the paste and loosens it. Let used oil cool completely before straining and disposing of it.

Cooking it at camp

Make the mixture at home and keep it cold in the cooler. At the campsite, shallow-fry the cakes in a generous film of oil in a cast-iron pan instead of deeper oil; it is safer.
