Cook's tip

Waxy potatoes stay limp, so choose floury ones. In a hurry, bake frozen oven fries as the packet says and just add the toppings. Add the toppings at the last moment: sauced fries go soft within 10 minutes.

Cooking it at camp

No oven? Cut the potatoes thinner (7 mm) and shallow-fry them in 1 cm of oil in a frying pan, in batches, or crisp frozen fries in a lidded pan. Pack the toppings in small tubs so assembly takes a minute.
