Crab-Stick Olivier with Gochujang Mayo and Corn (Russian × Korean)
Olivier's format meets Korean crab-stick salad: half-mashed potato, shredded crab sticks, sweetcorn and crisp cucumber in a sweet-spicy gochujang mayonnaise.
Method
Peel the potatoes, cut into 1.5 cm cubes and put them in a 18 cm pot with the salt and cold water to cover. Bring to the boil over high heat, then simmer over medium heat for , until a chopstick slides in, and drain. Return the pot to the heat briefly to steam off the moisture, roughly mash half the potatoes with a fork and spread everything out to cool. The mix of chunks and mash gives the texture of a Korean-style potato salad.

Cook's tip
Dress the potatoes only once they are completely cold, or the salad turns mushy. If you don't like heat, use less gochujang and add a little ketchup. Eat within a day, kept in the fridge.
Cooking it at camp
Prepare the potatoes, eggs and cucumber at home and carry the sauce separately in the cooler. At the campsite, shred in the crab sticks and toss just before eating. Keep it below 5 °C and never leave it out for more than 2 hours.
