Cook's tip

The plantains must be ripe enough to have almost black skins: only then are they sweet and soft enough to split without breaking. Firm yellow plantains taste starchy and don't suit this dish. With leftover pabellón beef and beans, this is a 30-minute dish.

Cooking it at camp

Make the beef and beans at home and bring them chilled. At the campsite, grill the plantains in their skins until the skins are black and the flesh is soft, slit them through the skin, fill, top with cheese and cover with foil to melt.
